•1 1/2 cups whole wheat pastry flour
•2 tsp baking powder
•1 tsp baking soda
•2 tsp ground cinnamon
•pinch of salt
•1/4 cup brown sugar or other sweetener (I use turbinado sugar)
•1 cup mashed sweet potato
•1/4 cup maple syrup
•1/4 cup honey
•1/2 cup applesauce
•2 eggs
Directions:
Preheat oven to 350. Spray mini-muffin pan with nonstick cooking spray.
In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, and sugar. Stir in other wet ingredients until just combined.
Fill muffin cups about 3/4 of the way and bake for 10 minutes or until a toothpick comes out clean.
Freezing Directions:
Flash freeze or let cool before storing in plastic freezer bags. To thaw, heat in the microwave inside a paper towel for 20 seconds.
Servings: 3 dozen
