Carrie's Oven Jambalaya

My friend Carrie shared this recipe for me.  She says it's a continual hit for people she cooks it for.  I made it for about 20 people and it knocked their socks off.  It's really super easy.  One pot!!!  


Oven Jambalaya:
1 lb Cajun Sausage (andouille is good), cut into bitesize pieces
1 lb Chicken Breasts, deboned and cut into " "
1 can beef broth
1 can French Onion soup
1 8oz. can tomato sauce
1 stick margarine, cut into small pieces
1/2 c bell pepper, chopped
1/2 c green onion, chopped
1/2 c celery, chopped
1/4 c dried parsley
2 c Uncle Ben's converted rice (it comes in a box)
1 tsp minced garlic
1 tsp Tony's Chachere's (duh!) put more if you like it spicy!

Combine all ingr. in a heavy pot (Dutch oven). Stir well until all is mixed. COVER, and bake at 325 for 1 hour and 15 min. WHILE BAKING IN OVEN LEAVE ALONE, DO NOT STIR OR UNCOVER. When you take it out of the oven, using a large fork,mix around a little. Serves 8. If you need double, double everything.

It's so so good, enjoy! I added some left over pork chops that I cut up into small pieces and i liked that added! oh, and the chicken cooks in the oven, don't cook it first.
